Everyone knows the best eating day of the year is the day after Thanksgiving, and everyone has their own way of using leftovers. Here’s what I like to eat, and what I buy ahead of time to prepare for The Day After.
Stuffing Egg Cups. You can follow the recipe here, or you can just do this: Pre-heat oven to 350, grease muffin tins, press leftover stuffing into them, crack an egg into the hole made by the stuffing. Bake for 15-20 minutes. Because I like my eggs runny and my stuffing crispy, I bake the stuffing for 5 minutes, then add the eggs for the remainder of the cooking time. Shopping list: Eggs. You may have used some in one of your Thanksgiving recipes, make sure you have enough for the egg cups.
Turkey stock. I always, always wake up and immediately begin making the turkey stock. The longer I put off handling a carcass, the less likely I am to use this very valuable leftover. Shopping list: Onions, carrots, celery, peppercorns, bay leaves. Again, you probably used these on the big day, but be sure to set aside enough for the stock.
The Perfect Turkey Sandwich. Now you get to enjoy the turkey again and have it with mayonnaise, mustard and if you so choose, cheese. I like to use pumpernickel, a little bit of mayo, a lot of mustard, lettuce, and salt and pepper. I know this is pretty boring, I encourage you to go wild. I also encourage you to use your favorite bread, the one you ate as a child, to get all those misty-eyed, holidays-of-childhood memories going. Shopping list: Condiments, your favorite childhood bread (hope it’s not Wonder), lettuce, tomatoes.
Pizza. Several years ago my friend Kelley mused that after all that bland-ish food, you want some garlic. Thankfully those of us in the tri-state area can get our hands on superior pizza immediately. Save the turkey casserole, turkey hash, and turkey soup for Saturday. Friday night is pizza night.
